It’s mango season in Senegal
And the ones we’re eating here are incredible. Just the best mangos I’ve ever tasted. The fruit always reminds me of my late grandmother Sylvia, who’d bring mangos to Fargo when I lived in North Dakota as a little kid. But those mangos tasted nothing like these.
But over 50% are wasted by spoilage! That’s why Peace Corps Volunteers in Senegal are transforming the mangoes by drying and juicing to improve food security and create wealth at the community level.
